luteal phase- inner AUTUMN

The phase following ovulation; the egg that was ovulated makes it way down your fallopian tubes. It is here that it will either be fertilized or disintegrate. The follicle that ovulated the egg will transform into the corpus luteum and will secrete progesterone for the next 12-14 days. Progesterone supports your endometrial lining that has grown as well as sustains a pregnancy if an embryo implants into the uterine lining. The gradual drop in estrogen and rise in progesterone may cause your mood and energy levels to gradually fade. if pregnancy is not achieved, the cycle will begin again!

Why This Helps:

This warming, nourishing meal is perfect for the luteal phase, when progesterone is high and the body craves grounding, restorative foods. Protein-rich chicken and bone broth support hormone balance and tissue repair, while pumpkin and coconut milk provide comforting fats and carbs to stabilize energy. Anti-inflammatory spices like turmeric, ginger, and garlic help ease cramps and support digestion, and leafy greens add fiber and key nutrients for hormone metabolism

Ingredients:

  • 1 medium yellow onion, diced

  • 1.5” knob of ginger, grated

  • 4-5 garlic cloves, minced

  • 2-3 cups of pumpkin, cubed

  • 2 cans of coconut milk

  • 2 cups of chicken bone broth

  • 1-2 cups of shredded chicken

  • 1 cup of kale, chopped

  • EVOO or butter

  • salt &pepper

  • turmeric

  • curry powder

  • chilli flakes (optional)

  • greek yogurt for topping

  • chilli oil for topping

  • 1 small bunch of cilantro, finely chopped for topping

  • lime wedges

Method:

  1. Heat EVOO or butter in a pot over medium high heat and add onion, ginger garlic and salt, chilli flakes and pepper to taste. Saute until soft. Add pumpkin cubes and remaining spices to taste, adjust salt as needed. Mix until spices are well incorporated and fragrant

  2. Add coconut milk and bone broth over pumpkin and bring to soft boil. Turn heat down and allow to simmer until pumpkin is fully cooked and pierces easily with fork

  3. Use an immersion blender to blend mixture or allow to cool slightly and blend in standing blender. *Tip: only fill blender half full and blend mixture in batches in order to prevent overflow

  4. Bring mixture back to medium high heat and add shredded chicken and chopped kale. Adjust seasoning if needed. Take off heat when kale starts to wilt

  5. Top with greek yogurt, chilli oil and cilantro and serve with lime wedges. Enjoy!
